Ingredients
For the biscuit base:
120 g biscuits (Biscotti type)
50 g of melted butter
For the White Chocolate Cream:
500 ml of milk
80 g of sugar
50 g of corn starch
50 g of white chocolate
For the Dark Chocolate Cream:
400 ml of milk
70 g of sugar
45 g of corn starch
50 g of dark chocolate
For the Cream Cheese:
200 g of cream cheese
100 ml of 33% cream
40 g of icing sugar
Coconut flakes to decorate
Preparation
Biscuit Base:
Start by chopping 120 g of biscuits until you obtain fine crumbs. In a bowl, combine the biscuit crumbs with 50g of melted butter to form the base.
Press the mixture into an 18cm cake tin, creating an even layer. Place in the refrigerator for 15 minutes to solidify.
White chocolate cream:
In a saucepan, combine 500 ml of milk with 80 g of sugar and 50 g of corn starch. Stir until the cornstarch has completely dissolved.
Heat the mixture over medium heat, stirring constantly. When it starts to thicken, add 50g of white chocolate and continue cooking until the chocolate has completely melted and the mixture has reached a consistency similar to that of a custard.
Pour the white chocolate cream over the cooled biscuit base. Place back in the fridge while you prepare the next layer.
Dark Chocolate Cream:
For the dark chocolate layer, repeat the process used for the white chocolate cream. Combine 400 ml of milk, 70 g of sugar and 45 g of corn starch in a saucepan.
Cook stirring continuously. Once it starts to thicken, add 50g of dark chocolate and continue stirring until the chocolate is fully incorporated and the mixture is smooth.
Carefully pour the dark chocolate cream over the white chocolate layer. Refrigerate for 4 hours or until solidified.
Cream Cheese:
In a bowl, whip 200g of cream cheese with 40g of icing sugar until smooth. In a separate bowl, whip 100ml 33% cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture to keep it light and airy.
Spread this final layer over the dark chocolate cream and sprinkle with coconut flakes for a tropical touch.
To Serve:
Once all the layers have solidified, carefully remove the cake from the mold.
Cut with a hot, sharp knife for clean layers.
Serve chilled, and enjoy decadent layers of pure chocolate bliss!
