Ingredients:
Apples: 700 grams (should reduce to about 360 grams of apple puree once cooked and blended)
Powdered gelatine: 15 grams
Optional: sugar, cinnamon, honey, depending on taste
Method:
Preparation of apples:
Peel the apples and remove the core, then cut them into pieces.
Place the apple pieces in a microwave-safe container.
Microwave for 5-10 minutes, until apples are soft.
Apple puree:
Blend the cooked apples in a blender or use a food mill to obtain a smooth puree.
If you wish, you can add sugar, cinnamon or honey according to your taste to sweeten and flavor the puree.
Preparation of gelatin:
Place 15 grams of gelatin powder in a small bowl and add cold water to cover it (follow package instructions for exact proportions of water and gelatin).
Let the gelatin absorb the water and swell for a few minutes (hydration).
Melt the swollen gelatin in a water bath, heating it gently until it is completely dissolved. Make sure there are no lumps.
Puree and jelly combination:
Gently combine the dissolved gelatin with the apple puree.
Frame:
Beat the mixture with an electric mixer or whisk for 15-20 minutes until light and fluffy.
Cooling down:
Pour the mousse into cups or a large container.
Place in the refrigerator for at least 1 hour to allow the mousse to firm up.
Service:
Once the mousse has reached the desired consistency, it is ready to be served.
You can decorate with a pinch of cinnamon or a drizzle of honey before serving if you wish.
Suggestions:
The amount of sugar may vary depending on the sweetness of the apples and your personal taste.
Make sure the gelatin is completely dissolved to avoid lumps in the mousse.
If you don’t have a microwave, you can cook the apples on the stovetop over low heat, with a little water, until they are soft.
