Orange Fondant Cake

Ingredients:

For the cake:

2 untreated oranges
200 g of sugar
3 eggs
150 g of flour
1 sachet of baking powder
1 pinch of salt
100 g of melted butter
For the orange syrup:

The juice of 2 oranges
50 g of sugar
Instructions:

Preheat the oven to 180°C (thermostat 6). Butter and flour a 24cm diameter baking pan.
Wash the two oranges carefully and boil them whole in a pan of water for about 30 minutes. Drain them and let them cool.
Once cooled, cut the oranges into wedges and remove the seeds. Blend the orange segments until you obtain a thick puree.
In a large bowl, beat the eggs and sugar until frothy.
Add the orange puree to this mixture.
Add the sifted flour, baking powder, salt and finally the melted butter. Mix well until you obtain a homogeneous mixture.
Pour the batter into the prepared pan and bake for about 30-35 minutes, or until the cake is golden brown and a toothpick comes out clean.
While the cake is baking, prepare the orange syrup. In a saucepan, heat the juice of the two oranges with the sugar, stirring until the sugar has completely dissolved. Simmer for a few minutes to thicken slightly.
When the cake is cooked, remove it from the oven and prick it in several places with a fork. Gently pour the hot orange syrup over the cake, making sure to distribute it evenly.
Let the cake cool in the pan for about 10 minutes, then turn it out onto a wire rack to cool completely.
Once cooled, you can dust the cake with icing sugar or enjoy it as is. Enjoy your meal!
