Just grate eggplant Ingredients!
- 2 eggplants
- 3 eggs
- 3 tablespoons tomato sauce
- 150 g pecorino or other cheese
- 3 slices of cooked ham
- 100 g wheat flour
- Parsley
- Breadcrumbs to taste
- Salt and pepper
- Olive oil
Procedure
- We cut 2 eggplants, remove the peels, and then grate them.
- We add salt to taste and mix, then we drain the eggplant into a container, removing the liquids. We transfer the dried eggplant to another container.
- Add 3 eggs, salt and pepper to taste, a clove of minced garlic, and mix until all the ingredients are well integrated with each other.
- We add 3 tablespoons of tomato sauce and continue mixing.
- On a board, chop the parsley, add it to the eggplant mixture and continue mixing.
- Now we add 100 grams of flour little by little and mix.
- On a baking tray, brush the surface with oil, sprinkle with bread crumbs and add a little of the mixture. We match so that the entire surface is the same.
- We add cooked ham, 150 grams of grated cheese, and cover with more eggplant mixture.
- We sprinkle bread crumbs on top, olive oil, and put it in a preheated oven at 200°C for 35 minutes.

Additional Tips
- Choose eggplants that are firm and free of blemishes. This will ensure that they have a fresh flavor and a pleasant texture when you cook them.
- After grating the eggplants and adding salt, let them sit for about 15-20 minutes so that the salt draws out the excess liquid and the characteristic bitterness of the eggplant. This will help the final texture to be firmer and the dish not to be watery.
- Once you’ve drained the liquid from the eggplants, be sure to press gently with your hands or a spatula to remove as much liquid as possible. This will help make the final result more consistent and prevent the mixture from being too wet.
