Gluten-free, lactose-free and oil-free pineapple upside-down cake recipe (wheat and dairy free)

Ingredients

  • For the Flour Mix:
    • 1 cup white rice flour (or whole grain, adjusting the amount of liquid)
    • 1/2 cup sweet cassava starch
    • 1/2 teaspoon xanthan gum
  • For the Caramel:
    • 1 cup of refined sugar
    • 1/2 cup of water
  • For the Coverage and Dough:
    • 1 ripe pineapple, sliced
    • 3 egg whites
    • 1 cup of sugar
    • 3 egg yolks
    • 200 ml coconut milk
    • 1 tablespoon of chemical yeast

Procedure

  1. Preparation of the Flour Mix:
    • Mix the rice flour, sweet cassava starch and xanthan gum. Reserve.
  2. Caramel:
    • In a pan, combine the sugar and water and heat until a light caramel forms. Spread the caramel in a 25 cm diameter mold, covering the bottom and sides.
  3. Cake Assembly:
    • Distribute the pineapple slices over the caramel in the pan. Reserve.
  4. Massa do Bolo:
    • Beat the egg whites and gradually add the sugar, beating until you get a firm mixture. Add the egg yolks, one by one, beating well after each addition.
    • Alternately, add the flour mix and coconut milk to the egg mixture, mixing gently with a spatula until you obtain a homogeneous dough.
    • Lastly, mix the chemical yeast into the dough.
  5. Finishing and Baking:
    • Pour the batter over the pineapple slices in the pan and place in the preheated oven at 180°C for approximately 35 minutes, or until a toothpick inserted in the center comes out clean.
    • Once baked, let the cake cool for a few minutes before running a knife around the edges to loosen. Invert the cake onto a serving plate.

  • Pineapple: Make sure the pineapple is ripe to ensure optimal sweetness and juiciness.
  • Unmold: If the cake does not come out of the pan easily, heat the bottom of the pan slightly over the stove flame to soften the caramel.
  • Serving: This cake is delicious served warm or at room temperature.
