Ingredients:
170 g of dark pastry chocolate
8 cl of hot whole milk
1 egg yolk
4 egg whites
20 g of granulated sugar
Instructions:
Melt the chocolate pieces in a bain-marie until you obtain a smooth and shiny consistency.
Pour the hot (but not boiling) milk over the melted chocolate. Mix with a spatula and then with a whisk until you obtain a smooth consistency.
Add the egg yolk to the melted chocolate and warm milk mixture. Add the egg yolk, mixing with a whisk.
Start whipping the egg whites until stiff. When bubbles start to form, gradually add the granulated sugar. Continue whisking until stiff peaks form.
In a large bowl, place the chocolate mixture and incorporate a third of the beaten egg whites. Stir vigorously to loosen the chocolate mixture (without worrying about breaking the egg whites).
Pour the rest of the whipped egg whites and incorporate them delicately with a spatula, lifting the mixture.
Pour the mixture into cups or molds and leave to cool in the refrigerator for at least 2 hours.
Before serving, garnish with some chocolate balls.
