Ingredients:
- 3 large tangerines (to make about 1 cup of tangerine juice)
- 1 cup of sugar
- 1/2 cup melted butter
- 2 eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- a pinch of salt
Instructions:
Preheat the oven to 180°C (350°F). Grease and flour a pudding mold.
Squeeze the tangerines to obtain about 1 cup of juice. You can strain the juice to remove the seeds and pulp.
In a large bowl, beat sugar and melted butter until mixture is smooth and creamy.
Add the eggs one at a time, beating well after each addition.
In another bowl, sift together the flour, baking powder, baking soda and salt.
Gradually add the dry ingredients to the sugar and butter mixture, alternating with the tangerine juice. Start and end with the dry ingredients.
Mix well until you obtain a soft and homogeneous dough.
Pour the batter into the prepared pudding pan.
Bake in the preheated oven for approximately 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Let the pudding cool in the pan for about 15 minutes before transferring to a wire rack to cool completely.
