Ingredients:
- 200 g soft butter
- 200g sugar
- 4 eggs
- 250g Greek yogurt
- 1 tsp vanilla extract
- 300 g flour
- 1 packet of baking powder
- 1 pinch of salt
- Grated zest of a lemon (optional)
- Powdered sugar for dusting
Preparation:
- Preheat the oven to 180 degrees Celsius. Grease a loaf pan and dust with flour.
- In a large bowl, beat the soft butter with the sugar until creamy and fluffy.
- Add the eggs one at a time and stir each one in well before adding the next egg.
- Add the Greek yogurt and vanilla extract to the butter-sugar mixture. If desired, add the grated lemon zest. Mix everything well.
- In a separate bowl, mix the flour with baking powder and a pinch of salt.
- Gradually add the dry ingredients to the yoghurt mixture and stir gently until a smooth dough forms.
- Pour the batter evenly into the prepared loaf pan.
- Bake the cloud cake in the preheated oven for about 45-50 minutes or until a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and let it cool in the tin for about 10 minutes before turning it out onto a wire rack to cool completely.
- Before serving, dust the cloud cake with powdered sugar.
