Strawberry tiramisu with balsamic vinegar

Ingredients:

For the strawberry balsamic sauce:

  • 500 g fresh strawberries, washed, stemmed and halved
  • 50 g sugar
  • 2 tbsp balsamic vinegar

For the mascarpone cream:

  • 250 g mascarpone cheese
  • 250 ml whipped cream
  • 80 g icing sugar
  • 1 tsp vanilla extract

For the tiramisu layers:

  • 200 g ladyfingers
  • 100 ml strong coffee, cooled
  • 2 tbsp Amaretto (optional)

For decoration:

  • Fresh strawberries
  • Fresh mint leaves
  • Dark chocolate, grated

Directions:

  1. Preparation of the strawberry balsamic sauce:
    • In a saucepan, mix the halved strawberries, sugar and balsamic vinegar.
    • Simmer over medium heat, stirring occasionally, until the strawberries are soft and the sauce has thickened slightly.
    • Remove the sauce from the heat and let it cool.
  2. Preparation of the mascarpone cream:
    • In a large bowl, beat together mascarpone cheese, powdered sugar and vanilla extract until smooth and creamy.
    • In a separate bowl, whip the cream until stiff.
    • Gently fold the whipped cream into the mascarpone mixture until well combined. Refrigerate the mascarpone cream while you prepare the other layers.
  3. Preparation of the tiramisu layers:
    • Dip the ladyfingers in the cooled coffee (and optionally drizzle with Amaretto) and place them evenly in a casserole dish or glass baking dish to form the bottom layer.
    • Spread half of the prepared strawberry balsamic sauce over the ladyfingers and spread evenly.
    • Pour half of the mascarpone cream over the strawberry layer and smooth it out.
    • Repeat the process with another layer of soaked ladyfingers, strawberry balsamic sauce and mascarpone cream.
  4. Cooling and solidification:
    • Cover the prepared tiramisu layer and let it rest in the refrigerator for at least 4 hours or overnight to allow it to firm up and the flavors to combine.
  5. Serve:
    • Before serving, take the strawberry tiramisu out of the fridge and decorate with fresh strawberries, mint leaves and a generous portion of grated dark chocolate.
    • Cut the tiramisu into pieces and serve on dessert plates.
