Ingredients:
For the dough:
- 250 g flour
- 125 g soft butter
- 100 g sugar
- 1 egg
- 1 teaspoon Baking powder
- A pinch of salt
- 1 tsp vanilla extract or vanilla sugar
For covering:
- 4-5 apples (depending on size)
- Juice of half a lemon
- 1 packet of vanilla pudding powder
- 500 ml milk
- 50 g sugar
For the crumbles:
- 50 g flour
- 50 g sugar
- 50 g cold butter
Directions:
- Preheat the oven to 180°C top/bottom heat. Lightly grease a baking pan (approx. 26 cm diameter) or line it with baking paper.
- For the dough, place the flour, softened butter, sugar, egg, baking powder, a pinch of salt and vanilla extract or vanilla sugar in a large bowl.
- Knead the ingredients into a smooth dough. If the dough is too dry, you can add a little milk.
- Press the dough evenly into the prepared baking pan so that the bottom is covered and a small edge is created.
- For the topping, peel, core and cut the apples into thin slices. Sprinkle with the juice of half a lemon to prevent browning.
- Distribute the apple slices evenly over the dough base in the baking pan.
- For the vanilla pudding, pour about 100 ml of milk into a cup and stir the pudding powder until smooth.
- Heat the remaining milk in a saucepan and add the sugar. Once the milk is hot, pour in the mixed pudding powder while stirring.
- Bring the pudding to the boil, stirring constantly, until it thickens.
- Pour the hot vanilla pudding over the apple slices in the baking pan and spread it evenly.
- For the crumble, put the flour and sugar in a bowl. Add the cold butter in small pieces.
- Using your fingers or a food processor, work the butter into the dry ingredients until crumbly.
- Spread the crumbles evenly over the vanilla pudding.
- Bake the apple pie with vanilla custard in the preheated oven for about 40-45 minutes or until the crumbles are golden brown and crispy.
- Remove the cake from the oven and let it cool slightly before removing it from the tin.
- Serve Grandma’s Apple Cake with Vanilla Pudding warm or at room temperature. It tastes especially good with a scoop of vanilla ice cream or a portion of fresh whipped cream.
