Mandarin Swiss roll, the best roll in the world!

Ingredients:

150 g flour
4 eggs
½ tsp baking powder
4 tbsp water
1 pinch of salt
350 g quark
1 cup of cream
150 g sugar
2 cans of mandarins
1 packet of vanilla sugar
6 sheets of gelatine
70 g icing sugar
and some for dusting

Preparation:

1. First prepare the filling so that it can set a little in the fridge: SO, Drain the mandarins and puree half of the mandarins and whip the cream until stiff. Now mix the quark with the powdered sugar and vanilla sugar and add the pureed and unpureed mandarins, fold in the cream.

2.Now prepare the gelatine according to the instructions on the packet, stir in and place the filling in the fridge for a few hours.

3. Next, separate the eggs for the dough, beat the egg whites with a pinch of salt until stiff. Then beat the egg yolks with water and sugar until very foamy. Now add the egg white and egg yolk mixture together, sift in the flour with the baking powder and fold in.

4. Now spread the dough on a baking tray lined with baking paper and bake at 200°C for 10 to 15 minutes. 5. Now turn the sponge cake out onto a damp tea towel, remove the baking paper and turn the sponge cake over onto another tea towel. 6. Next, spread the filling on the sponge cake and carefully roll up the cake using the tea towel. The damp tea towels will prevent the base from breaking. Dust the sponge cake roll with a little icing sugar, arrange and serve. Ready to snack!
