Ingredients:
- 400 gr of coconut milk
- 6 medium eggs
- 100 g of good quality grated coconut
- 125 g of sugar
For the caramel:
- 150 gr of sugar
- 1 tablespoon of water
- A few drops of lemon juice (optional)
Elaboration:
We start by turning on the oven at 180ºC so that it warms up.
We also prepared a bain-marie; that is, a deep tray with water; I always put paper on the base to make sure it doesn’t boil and inside it we will put the mold for the homemade and very easy coconut flan.
Now let’s go with the caramel; Making it at home is very easy but if you prefer you can buy it ready-made.
In a saucepan we put the 150 grams of sugar together with a pinch of water and the lemon juice (this is optional); We put it over low heat and let it start to boil.
We do not touch it and let it begin to take color first at the edges and then in the center; Constantly watching as the caramel burns quickly.
We leave the flan mold by hand and when it has color, we move it and leave it on the heat for a few seconds until we have it of the desired color and immediately we pour it into the mold, distributing it throughout the base.
We continue with the mixture for the flan; It’s very easy, you just have to mix all the ingredients; eggs, coconut milk, sugar and grated coconut; We beat well, you can use a mixer so that there are no lumps.
We pour this mixture into the mold that will already have the hard candy.
We put the mold in the water bath and put it in the oven at 180ºC for 1 hour or 1 hour 15 minutes.
If you see that it takes on a lot of color on the top, it turns golden, put a piece of aluminum foil on top.
To check that it is well done, prick it with a skewer and if it comes out dry, it means it is; At the same time, when you touch the top you have to notice that it is not liquid.
