Ingredients:
For the chocolate sponge cake:
- 4 eggs
- 100 g of sugar
- 80 g of flour
- 20 g of cocoa powder
- 1 teaspoon baking powder
For the chocolate filling:
- 200 g of dark chocolate
- 200 ml of whipping cream

- Prepare the sponge cake:
- Preheat the oven to 180°C and line a baking tray with baking paper.
- In a bowl, beat the eggs with the sugar until the mixture is frothy and tripled in volume.
- Sift the flour, cocoa powder and baking powder and gradually add them to the egg mixture, mixing gently with a spatula from bottom to top so as not to dismantle the mixture.
- Pour the mixture into the prepared pan and level the surface well.
- Bake for about 12-15 minutes or until the sponge is puffy and silky to the touch.
- Remove the sponge cake from the oven and let it cool completely.
- Prepare the chocolate filling:
- In a small saucepan, heat the whipping cream until it begins to boil.
- Remove from the heat and add the chopped dark chocolate. Stir until the chocolate melts completely and the mixture is smooth and homogeneous. Let cool.
- Assemble the roll:
- Roll out the sponge cake on a clean, lightly floured cloth.
- Spread the chocolate filling evenly on the surface of the sponge cake, leaving a margin of about 2 cm on the edges.
- Gently roll the sponge using the tea towel as a guide. Make sure to roll it tightly but gently to prevent it from breaking.
- Transfer the roll to a serving plate and leave to cool in the refrigerator for at least 30 minutes to allow the filling to harden slightly.
- Decorate and serve:
- Before serving, dust the roll with icing sugar and sprinkle it with grated dark chocolate.
- You can decorate the roll with sliced strawberries or other fresh fruit if you prefer.
