INGREDIENTS

- 500 g of strawberries
- 2 tablespoons of powdered sugar
- 300 g cream 30% or 36%, for whipping (chilled)
- 300 g of ready-made meringue, meringues (or homemade from the recipe below)
PREPARATION
- Wash the strawberries, dry them and remove the stalks. Mix 100 g of strawberries with a blender into a puree, adding 1 tablespoon of powdered sugar. Cut the remaining strawberries into smaller pieces and mix with the mousse.
- Whip the heavily cooled cream with 1 tablespoon of powdered sugar until stiff.
- Break the meringues and briefly mix with the whipped cream.
- Pour the meringue with cream and strawberries with mousse into cups alternately. Finally, decorate with meringue. Serve immediately.
SERVING SUGGESTION
- You can also add blueberries and mint leaves for decoration. You can add half a teaspoon of vanilla extract to the whipped cream.
TIPS
Homemade meringues : 2 egg whites + 200 g of fine sugar. Preheat the oven to 110 degrees C. Beat the egg whites to a medium-stiff foam, then gradually add sugar a spoonful at a time, beating constantly until the foam is very stiff and shiny. Place 5 portions of meringues on a baking tray lined with baking paper, leaving space between them. Place in the oven on a lower shelf and bake for 1 hour , or until the meringues come away easily from the paper. Remove from oven and cool completely before using.
