ROLLS WITH KAJMAK, APPLES AND CINNAMON CRUST

INGREDIENTS

 24 PIECESCAKE

  • 250 ml of warm milk
  • 1 sachet of instant yeast (7 g)*
  • 500 g of wheat flour
  • 50 g of sugar
  • pinch of salt
  • 1 egg
  • 2 yolks
  • 70 g of soft butter
  • for brushing: 1 egg

FILLING

  • 250 g of kajmak mass (fudge mass) from a can
  • 3 apples (e.g. Renets)

CINNAMON SHELL

  • 2 tablespoons of butter
  • 7 tablespoons of sugar
  • 2 teaspoons of cinnamon

FROSTING

  • 4 tablespoons of lemon juice
  • approx. 1/2 cup of powdered sugar

PREPARATION

  • Pour instant yeast into warm milk, mix and set aside for 5 minutes. Remove the eggs and butter from the refrigerator and warm them up.
  • Sift the flour into a bowl, add sugar and salt. Mix, make a well, pour the milk and yeast into it and mix everything with a spoon. Then start kneading the dough by adding the egg and yolk. After about 5 minutes of kneading, add the butter and continue kneading (by hand, with the hook of a planetary mixer or in a bread machine) for about 10 – 15 minutes until the dough is smooth and elastic. Cover with foil and set aside to rise for 1 and 1/2 hours .
  • In the meantime, prepare the apples : peel them and cut them into cubes. Also prepare the cinnamon crust :  place the ingredients in a bowl and rub with your fingers until crumbly.
  • Place the risen dough on a board or countertop and knead for a while to remove air bubbles. Divide them into 2 parts and roll each part into a rectangle measuring approx. 25 x 30 cm. Lightly spread with kajmak and sprinkle with apples.
  • Roll the dough into rolls along the long side and cut each roll crosswise into 12 slices. Place them in two 20 x 30 cm baking trays lined with baking paper, leaving small spaces apart (or in one very large rectangular baking tray). Set aside for about 45 minutes to rise.
  • Preheat the oven to 180 degrees C. Brush the tops of the buns with beaten egg and sprinkle with cinnamon crumble. Bake until golden brown for approx. 20 minutes . If we have 2 trays, we bake one tray first and then the other.
  • After baking, pour the icing : heat the lemon juice, add powdered sugar and mix.

TIPS

* or 30 g of fresh yeast , from which you should make a leaven: first grind it with a teaspoon of sugar, then add a tablespoon of flour and 50 ml of milk, mix and set aside to rise for 10 minutes. Add to the flour along with the rest of the milk and continue as in the recipe.
