Ingredients:
- Medium courgettes
- Extra virgin olive oil
- Salt and Pepper To Taste
- Chopped fresh herbs (such as parsley, thyme, rosemary, basil – to taste)

Method:- Preparation of the courgettes :
- Wash the courgettes and cut the ends.
- Cut the courgettes into rounds about 1.5-2 cm thick.
- Marinade (optional) :
- If you want to add a little extra flavor, you can marinate the courgettes before skewering them. Toss the zucchini rounds with olive oil, chopped fresh herbs, salt, pepper and lemon juice if desired. Let them marinate in the refrigerator for at least 30 minutes.
- Assembling the skewers :
- Make skewers by threading zucchini rounds onto each, alternating with other ingredients if desired, such as peppers, cherry tomatoes or onions.
- Cooking :
- Once the skewers are prepared, you can cook them on the grill, in a pan or in the oven. If using the grill, be sure to preheat it well and brush the skewers lightly with olive oil to prevent sticking.
