How to prepare crêpes
Step 1
To prepare the crêpes, first whisk the eggs vigorously in a bowl. Then pour in the milk slowly, continuing to mix with a whisk.
Step 2
Then add the sifted flour little at a time, a step that will allow you to avoid the formation of lumps. Lastly, add a pinch of salt to give flavour, avoiding sugar instead: in this way you will obtain a neutral base to fill in both sweet and savory versions.
Step 3
In a few seconds you should obtain a smooth, lump-free and fairly dense batter. Otherwise, just sift it or blend it briefly with a blender.
Step 4
At this point, butter a crepe maker or a normal non-stick pan and wait for the butter to start sizzling, which is a sign that it is hot. Use absorbent paper to remove the excess, then pour a not too generous ladle of batter and make rotating movements to spread the dough evenly.
Step 5
When the batter has thickened and it is easy to detach the edges, it will be time to turn the crepe with the help of a spatula. Let it cook for a few seconds on the other side, then place it on a plate and proceed in this way until the dough is finished, buttering the crepe maker again if necessary.
Step 6
As they are ready, arrange the crêpes one on top of the other, creating a pile: this way they will remain moist, soft and elastic. If you want to enjoy your crêpes immediately, this is the right time to fill them, so the filling will heat up or melt, depending on the filling you have chosen.
Step 7
We opted for some delicious hazelnut cream, which we distributed generously over the entire surface. Then simply fold each crepe into four, garnish with icing sugar and enjoy
