Snow dumplings in vanilla sauce

Ingredients

1 pinch of salt
100 g icing sugar
2 packs of vanilla sugar
4 eggs
2 vanilla pods
550 ml milk
60 g granulated sugar
1 tsp lemon juice
2 tbsp chocolate shavings

preparation

1. First, cover a large flat plate with cling film so that the dumplings don’t stick to the plate later.
Now separate the eggs and put the egg yolks aside for the sauce. Cut the vanilla pods lengthways.

2. Next, bring the milk to the boil with 30 g of granulated sugar, vanilla pods and salt and immediately remove from the heat. Then beat the egg whites with the icing sugar and vanilla sugar until creamy, stirring in the lemon juice.

3. Now use a large spoon to cut out 6 equally sized dumplings from the snow and place them in the hot milk. Leave to stand for about 2 minutes, then turn and leave to stand for another 2 – 3 minutes.

4. Now remove the dumplings from the milk, drain well and place on the plate with the cling film.

5. Now remove the vanilla pods from the milk and mix the egg yolks with the remaining granulated sugar (30 g). Bring the milk to the boil and pour in the egg yolk mixture while stirring.
Continue stirring the egg milk over a low heat until the mixture thickens to a creamy consistency.

6. Finally, distribute the vanilla sauce on plates, place the dumplings in them, garnish with chocolate shavings and serve.
