INGREDIENTS:
For the dough:
- 280 g of flour;
- half a teaspoon of baking powder;
- 1 pinch of salt;
- 1/4 teaspoon of vanilla sugar;
- 80 g of butter;
- 200 g of ryazhenka;
- 1 egg yolk;
For the filling:
- 1 egg white;
- 40 g of powdered sugar;
- 1 teaspoon of vanilla sugar;
- 100 g of chopped walnut core;
Additional ingredients:
- 100-150 g of powdered sugar.
METHOD OF COOKING:
1. Prepare the dough: add flour, baking powder, salt, vanilla sugar and butter to a deep bowl. Mix the ingredients by hand to make a crumbly dough.
2. After that, add sour cream and yolk. Knead a soft and uniform dough that does not stick to your hands. Place it in a plastic bag and put it in the refrigerator for 10-15 minutes.
3. Prepare the filling: add egg white, sugar and vanilla to a deep bowl. Beat the ingredients with a mixer until you get a white fluffy creamy mass.
4. Grind walnut kernels with a blender and add to a bowl. Mix with a spatula. The filling is ready!
5. Remove the dough from the refrigerator and transfer it to a floured work surface. Cut it into four equal parts. Take one piece of dough and roll it out with a rolling pin into a thin round sheet.
6. Cut the sheet of dough into eight equal sectors using a pizza knife. Add a spoonful of the filling near the short side of each sector, then roll them into a cornelian shape, covering the filling first with the corners of the dough to prevent it from flowing. Place them on a baking sheet lined with baking paper.
7. Bake the croissants in an oven heated to 180°C for 15-20 minutes.
8. Take the cookies out of the oven and immediately pass them through a bowl or a bag of powdered sugar.

9. Spread them on a plate and enjoy them with pleasure!
