How to Make Homemade Raw Ham
ingredients
1 pork leg
1.4 kg of coarse salt
60 g of cooking salt
600 g of sugar
1 tablespoon of ground pepper
1 tablespoon of nutmeg
2 liters of water
Preparation
We start by deboning the leg, removing the part where there is more meat and placing it next to give it a rounded shape.
It is okay if there is too much fat, you remove it later when it is dry since the fat adds a lot of flavor to the process.
In a bowl we mix the coarse salt, coarse salt, sugar, pepper and nutmeg, it is important to mix well.
We put the pork in a large container, add the salt mixture and massage both top and bottom. We leave it in the refrigerator, well covered, for about 24 hours.
After 24 hours. We transfer the pork to another smaller container and add the 2 liters of water, if the liquid does not cover all the meat then we need to make more brine.
If the pork floats, the only thing you have to do is add weight with whatever you want, but be careful because whatever you put on top must resist the 22 days that we leave it in the refrigerator. It must be under the refrigerator but above where the fruit and vegetables are stored.
After 22 days we have to drain the ham and then let it rinse under water for 1 hour in cold water. This step is important, what the cold water does is remove all the excess salt.
Then we let it drain until it is completely dry (we can help ourselves with some paper or a dishcloth to speed up this step). We wrap it in microporous cellophane paper until it is well wrapped, we put a ham net on top with the end towards the belly.
In this part it is ideal to shape it with a couple of blows to leave it well rounded and press it.
How to store raw ham
Once pressed we simply have to leave it in a place that does not exceed 20 degrees of temperature and leave it for at least 4 months. The place can be a refrigerator or a constantly ventilated point of the house.
How long does raw ham last?
Once the 4 months have passed, from there you can see how much you want to consume at that time and how much you can reserve for another day in the freezer. Raw ham can last from 6 to 7 months frozen.
