Ingredients:
- 300 g of 00 flour (plus extra for the pastry board)
- 100 g of sugar
- 2 large eggs
- 80 g of melted and cooled butter
- Grated zest of 1 lemon
- Preparation of the dough:
- In a large bowl, mix the sifted flour with the baking powder and a pinch of salt.
- Add the sugar, the lightly beaten eggs, the cooled melted butter and the grated lemon zest.
- Mix all the ingredients with a spoon until you get a smooth dough.
- Processing the dough:
- Transfer the dough to a lightly floured surface and knead vigorously with your hands for about 5-7 minutes, until smooth and elastic. Add a little flour if the dough is too sticky.
- Donut formation:
- Divide the dough into small walnut-sized balls.
- With each ball, form a stick about 15-20 cm long and join the ends to form a donut. Press the ends well to seal them.
- Frying the donuts:
- Heat plenty of peanut oil in a deep frying pan over medium heat (about 170-180°C).
- Fry the donuts a few at a time, turning them gently with a slotted spoon to brown them evenly on both sides. This will take about 2-3 minutes for each side.
- Draining and finishing:
- Once golden, transfer the donuts to a plate lined with paper towels to remove excess oil.
- Service:
- Dust the donuts with powdered sugar, if desired, and let them cool slightly before serving.
- 1 sachet of baking powder (16 g)
- 1 pinch of salt
