Orange and vanilla yogurt donuts recipe

Ingredients:
1 egg
Pinch of salt
2 tablespoons of sugar
Zest of an orange
70 ml of vegetable oil
125g vanilla yoghurt
About 400 g of 00 flour
1/2 teaspoon baking powder
Apricot jam (optional, for the filling)
Coconut flour (for dusting)
Additional vegetable oil (for frying)

Instructions:
Prepare the dough:
In a large bowl, beat the egg with a pinch of salt.
Add 2 tablespoons of sugar and the zest of an orange. Mix well.
Pour 70 ml of vegetable oil and 125 g of vanilla yogurt. Mix until well combined.
Gradually add about 400 g of 00 flour and 1/2 teaspoon of yeast. Mix until a dough forms. The dough should be soft but not sticky. If necessary, add more flour to obtain the right consistency.
Form the donuts:
Lightly flour a clean work surface and roll out the dough to about 1/2 inch thick.
Use a donut cutter or two different sized round cutters to cut out donut shapes. If you don’t have a donut cutter, you can use a glass or cookie cutter to cut out the circles and a smaller cutter or bottle cap to cut out the center holes.
Fry the donuts:
Heat the vegetable oil in a deep skillet or pot over medium heat. The oil should be about 1 inch deep.
Once the oil is hot (about 350°F or 175°C), carefully lower the donuts into the oil, a few at a time, being careful not to crowd the pan.
Fry the donuts for about 2-3 minutes on each side or until golden brown.
Use a slotted spoon to remove the donuts from the oil and place them on a plate lined with absorbent paper to remove excess oil.
Fill and dust (optional):
If desired, fill a piping bag with apricot jam. Make a small hole in the side of each donut and place a small amount of jam in the center.
Dust the donuts with coconut flour for an extra touch of sweetness and texture.
