So stuffed peppers are something my parents made when I was a kid; it was pretty much the only way they could get me and all my siblings to eat rice! It’s super easy to make and the flavor is amazing! Dan and I make it at least twice a month! I love it.
I didn’t eat peppers as a child, but now they are my favorite part. Dan loves that the top gets all crispy when you cook it.
He usually eats my top too! Anyway, Dan is making meatloaf right now and I want to watch it!

ingredients
3 large peppers
½ pound ground turkey
1 16-ounce can black beans
2-3 cups of rice
4 ounces jalapeno cream cheese
1 cup BBQ sauce, my favorite is Sweet Baby Ray’s Hot and Spicy!
4 tablespoons of olive oil
1 cup parmesan
1 tablespoon garlic salt
1 tablespoon black pepper
1 teaspoon chili powder
1 teaspoon Cajun seasoning

Cut the peppers in half and remove seeds and membranes.
Cook the rice however you like (I use rice boiled in the bag, it’s easier for me!)
Brown the turkey in a little olive oil, with garlic salt, pepper, chili powder and Cajun
Once these things are cooked, place them in a bowl and add the beans, barbecue sauce and cream cheese
Mix well!
Place the peppers on a baking tray covered with cling film and put the rest of the oil on the tray and on the peppers
Spoon about ⅙ of the turkey/rice/bean mixture into each pepper half
Sprinkle the cheese on top of the pepper/stuffing combo
Bake at 350 for 25-30 minutes or until peppers are to your liking.
