After you roll the dough with the filling, take your time to pick up the knife. After cutting the workpiece with it into portioned pieces, you will only see how the custard will begin to bulge outward. So that the filling remains inside, and the pastry itself looks fabulously beautiful, use a regular thread. Use it to cut the roll.
I share the cooking recipe:
We make custard. We take eggs. We separate the whites from the yolks. Add 120 g of sugar to a saucepan with egg yolks. Pour corn starch and 10 g of vanilla sugar.
Pour 320 ml of milk into the dry ingredients. Mix well. We send the stewpan to the fire. Boil its contents over low heat until it thickens, stirring actively.
Transfer the finished cream into a deep bowl. We cover it with food film in contact. Leave the cream until it cools completely at room temperature.
We knead the dough. We sift wheat flour into a deep container. Add salt and 100 g of sugar. Add dry yeast and vanilla sugar. Mix everything using a whisk.
Add 300 ml of warm milk and melted (not hot) butter to the dry ingredients. Add egg whites.
Knead a homogeneous dough. Place it in a container greased with oil. Cover the dough with cling film. We take it to the heat for 60 minutes.
Dust the work surface with flour. We spread the dough on it. Roll it out into a rectangular thin layer. Spread the completely cooled cream on top, spreading it evenly. We do not reach the bottom edge.
Carefully roll the dough with cream into a tight roll. Using a thread, cut it into small pieces of the same size (future buns).
We lay out the blanks on a sheet covered with baking paper. We cover them with a towel. Leave the buns to stand for 15 minutes at room temperature.
Beat the egg yolk with the remaining milk. Lubricate the workpiece with the resulting mixture using a cooking brush. We send the sheet to the oven heated to 180 degrees for 30-35 minutes.
Sprinkle the buns with powdered sugar using a sieve. Then brew your favorite tea and get comfortable. With such an incomparable dessert and a delicious hot drink, your evening will be simply magical.
