Cherry pie is a simple and delicious dessert of American origin, perfect as an after-dinner treat on any occasion. Just like its autumnal apple variant, apple pie, this scenic tart is made with two layers of fragrant shortcrust pastry that envelop a soft filling of fresh cherries, flavored with lemon zest.
This is a dessert that has become iconic, in the United States and in the rest of the world, also thanks to the cult television series of the 90s Twin Peaks by David Lynch: it was, in fact, the favorite cake of agent Dale Cooper, the main character of the story, who used to eat it with a cup of hot American coffee.
The preparation is very simple: once the pie crust has been made, working together flour, cold butter, sugar, salt, water and apple cider vinegar, it will need to be placed in the fridge for an hour; in the meantime, pit the cherries, flavour them with the grated zest of a lemon and then combine them with corn starch, sugar and melted butter, so as to obtain a compact and not too watery filling.
Once the base has been filled and everything is covered with a second disc of brisée, brush the surface with an egg yolk, beaten with a drop of water, and then sprinkle with granulated sugar. All that remains is to bake at 190 °C for 50 minutes: the result is a cake with a fabulous crunchy crust and a tender and melting interior, to be enjoyed after about 2 hours, when it is very cold and firm.
Once ready and sliced, you can eat it for breakfast or as a snack, along with a good cappuccino or a steaming infusion, but also for a birthday party, perhaps accompanied by a dollop of whipped cream or a scoop of vanilla ice cream.

How to prepare cherry pie
Step 1
Rinse the cherries, then remove the stalk and the internal stone and collect them in a large bowl 1.

Flavour with the grated zest of a lemon 2, mix and set aside.

In the meantime, prepare the pie crust: collect the flour, cold butter, sugar and salt in the bowl of the kitchen mixer 3.

Blend for a few moments, then add the water 4 and vinegar.

Blend for a few more moments, until the flour has absorbed the liquid ingredients, then transfer everything onto a floured work surface and knead with your hands until you obtain a loaf 5. Wrap it in cling film and leave it to rest in the fridge for 1 hour.

After the necessary time has passed, take the dough again, divide it into two pieces, then roll out the first portion with a rolling pin into a disk about 4 mm thick 6.

With the disk of dough obtained, line a 22 cm diameter pan already buttered and floured, making the edges stick out slightly 7.

At this point, take the cherries again and add the sugar, corn starch and melted butter 8, then mix well.

Transfer the cherries, along with all their maceration liquid, onto the pie crust base 9.

Arrange the cherries so that they are more concentrated in the center, forming a sort of dome 10.
