How to prepare the magic cake
Step 1
To prepare the magic cake, first melt the butter and let it cool. Then separate the egg whites from the yolks, then beat the latter with the sugar until you obtain a light and frothy mass 1.
Step 2
Pour the very cold water from the fridge and incorporate it with the whisks, flavour with the seeds of a vanilla pod, then pour in the lukewarm melted butter, mix well and add a pinch of salt. At that point, gradually add the sifted flour, mixing it continuously with the whisks to avoid lumps, and finish with the hot milk, pouring it in a thin stream while you continue to beat the mixture 2.
Step 3
Take care of the egg whites: work them with the electric whisks, which must be clean and dry, at maximum speed, pouring in the lemon juice in a thin stream, which will make them more stable 3. You should obtain whipped egg whites but not too much, still being soft and frothy.
Step 4
Gently incorporate the egg whites into the mixture set aside: in the end, you will obtain a rather liquid dough 4.
Step 5
Pour the dough into a 20 cm square baking dish, lined with baking paper on the bottom and sides 5: the frothy part of the egg whites will remain on the surface. At this point, you can bake the cake in a static oven preheated to 150 °C for 1 hour and 20 minutes.
Step 6
Once the necessary time has passed, do the toothpick test to make sure that the inside of the cake has hardened, then take it out of the oven 6 and let it cool completely before removing it from the mold.
Step 7
Once cold, transfer the magic cake to a tray or serving dish, sprinkle it with icing sugar 7 and cut it into squares.
