Ingredients
- 2 apples
- 100 g of flour
- 2 eggs
- 1 sachet of baking powder
- 50 ml of milk
- 50 ml of natural light yogurt
- 60 g of stevia-based sweetener (or 100 g of white or whole sugar if you prefer)
- Juice of ½ lemon
Preparation
- Start by peeling and cutting the apples into thin slices. Sprinkle with lemon juice, this prevents the apples from turning dark and adds a delicious citrus touch.
- In a bowl, beat the eggs with the sweetener until you get a fluffy mixture.
- Gradually add the milk and light yogurt, whisking continuously.
- In another container, mix the flour with the baking powder and then add to the previous preparation, mixing well until you achieve a smooth dough.
- Now, prepare your lunch box with a little oil or parchment paper.
- Pour half of the preparation into the pie plate, place a layer of apples and then cover with the rest of the dough. To finish, put the rest of the apples on top.
- Send it to the oven preheated to 180°C and cook for about 25-30 minutes. You’ll know it’s ready when you poke it with a toothpick and it comes out clean.
- Once out of the oven, let it cool for a while in the pan, and then transfer it to a rack to finish cooling.
When serving, you can add a touch of cinnamon on top or a pinch of powdered sweetener to give it extra flavor.
