Ingredients:
- 200 g low-fat stevia-based cookies
- 75 g of walnuts
- 3 teaspoons of bitter cocoa
- 250 g unsweetened dark chocolate
- 100 ml of milk
- 50 g unsweetened dark chocolate
- 90 g of sugar-free white chocolate
- 2 tablespoons of vegetable oil
Instructions:
- Grind the cookies and nuts in a food processor until you obtain a fine mixture.
- Add the bitter cocoa and mix well.
- Heat the milk until it is almost boiling and pour it over the unsweetened dark chocolate. Stir until smooth.
- Add the chocolate mixture to the crushed cookies and nuts. Mix until all ingredients are well combined.
- Form small balls with the mixture and place them on a tray lined with parchment paper.
- Melt the unsweetened dark chocolate and the unsweetened white chocolate separately with a tablespoon of vegetable oil each, in the microwave or in a double boiler.
- Dip the truffles in the dark chocolate and place them back on the tray.
- Decorate some truffles by dipping them in the melted white chocolate.
- Refrigerate the truffles for at least an hour so the chocolate hardens.
